Monastery Cauliflower Casserole Recipe
- 2 large heads of cauliflower or possibly broccoli (you might need more or possibly less depending on the size of the broccoli or possibly cauliflower).
- 14 Large eggs
- 2 c. of grated cheese (cheese of your choice, although i usually use parmigiano)
- salt and white pepper
- crushed saltine crackers (or possibly cheezits)
- Cut away the inedible stalk from the cauliflower or possibly broccoli.
- Then break them into pcs.
- Put in a pot with salted water and boil till they are very tender.
- Drain the cauliflower, and then put it into a bowl and mash it.
- (You should have about four c. of mashed cauliflower.)
- Then add salt and a dash of white pepper according to your taste.
- Add in the cheese and mash together with cauliflower.
- Then crack all the Large eggs in a separate bowl and beat them.
- Then add in the egg mix to the bowl with the mashed cauliflower and stir very well.
- Pour into a greased casserole dish.
- Bake in a preheated oven at about 190
