Peppermint Cremes

  1. Microwave chocolate, cream and butter in microwaveable bowl on HIGH 1 to 1-1/2 min.
  2. or until butter is melted, stirring after 1 min.
  3. Stir until chocolate is completely melted.
  4. Blend in extract.
  5. Refrigerate 3 hours or until firm.
  6. Shape 1 tsp.
  7. chocolate mixture into 1/2-inch ball; place between 2 wafers to form sandwich.
  8. Press together gently.
  9. Roll edge in crushed mints; place on waxed paper-covered baking sheet.
  10. Repeat to make 20 cookie sandwiches.
