Crock Pot Chicken Cacciatore
- 1- 1/2 pound Boneless, Skinless Chicken Thighs
- 1 can (6 Oz. Size) Tomato Paste
- 3/4 cups Chicken Broth
- 1/2 cups Onion, Chopped
- 1/2 cups Chopped Green Pepper
- 1- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1/2 teaspoons Garlic Powder
- 1 can (14.5 Oz. Size) Diced Tomatoes
- 2 Tablespoons Arrowroot Powder, Or Cornstarch
- 2 Tablespoons Water
- Penne Or Rice, To Serve
- Place chicken in the bottom of your greased crock pot.
- Combine the tomato paste and chicken broth in a small bowl.
- Next layer the onion, green pepper, tomato paste mixture, and seasonings over your chicken.
- Top with the diced tomatoes.
- Cover and cook on low for 8 hours.
- After 7 hours, combine the arrowroot and water.
- Stir into chicken mixture and cover.
- Finish the last hour of cooking.
- Serve over rice or pasta.
