Scalloped Potatoes Recipe
- 3 tbsp. butter
- 2 tbsp. all-purpose flour
- 3 c. lowfat milk
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 6 med. potatoes, pared and sliced thin
- 2 tbsp. minced onion
- Preheat over 350 degrees.
- In a saucepan, melt the butter.
- Stir in the flour and cook until a golden paste forms.
- Whisk in the milk and season with salt and pepper.
- Cook until thick and creamy.
- Put half the potatoes in greased 2 qt casserole.
- Cover half with onion and half the sauce; repeat layers.
- Cover and bake about 1 hour.
- Uncover and continue baking until top is browned.
- Shredded cheese may be added to sauce.
