Quinoa Chowder with Feta and Scallions

  1. In a large saucepan set over medium heat, add the olive oil.
  2. When the oil begins to shimmer, add the garlic and jalapeno.
  3. Cook, stirring, for 1 minute.
  4. Add cumin, 1/2 teaspoon pepper and water.
  5. Bring to a boil.
  6. Add the potato and quinoa.
  7. Season with salt to taste.
  8. Simmer until the potato and quinoa are tender, about 20 minutes.
  9. Divide among four bowls and garnish with the feta and scallions.
  10. Serve.
