Beef and Caramelized Onion on Hot French Bread

  1. Preheat the oven to 300F.
  2. Wrap the bread in aluminum foil and put in the oven.
  3. In a large nonstick skillet, heat the oil over high heat, swirling to coat the bottom.
  4. Cook the onion for 3 minutes, stirring constantly (using two utensils works well).
  5. Reduce the heat to medium high.
  6. Stir in the sugar.
  7. Cook for 3 minutes, or until the onion is richly browned, stirring constantly.
  8. Stir in the water.
  9. Remove from the heat.
  10. In a small bowl, whisk together the yogurt and mustard until completely blended.
  11. Cut the bread in half lengthwise, then cut each piece in half crosswise.
  12. Spread the yogurt mixture on the cut side.
  13. Top with the beef, and then the onion.
