3 Day Mashed Potatoes Recipe
- 5 lb bag of white potatoes (Yukon Golds it will look polka dotted) butter salt and white pepper
- 8 ounce small curd cottage cheese
- 4 ounce lowfat sour cream crushed soda crackers size of bread crumbs
- Butter casserole dish.
- Peel, boil and mash potatoes using lots 'o' butter.
- Flavor with salt and pepper to taste.
- Stir in the lowfat sour cream.
- Gently mix in the cottage cheese.
- Put into casserole.
- Top with a dusting of the crushed crackers and drizzle generously with butter.
- Cover and chill up to 3 days.
- To Finish
- Preheat oven to 350F.
- Bake uncovered for 30 min.
