Italian Nachos
- 20 whole Wonton Wrapper Squares
- 1 cup Oil
- 4 whole Italian Sausage Links
- 30 slices Pepperoni
- 1 cup Shredded Rotisserie Chicken (optional)
- 1/2 cups Alfredo Sauce
- 3/4 cups Shredded Mozzarella Cheese
- 1/4 cups Shaved Parmesan Cheese
- 1/4 cups Sliced Black Olives
- 1/4 cups Sliced Pepperoncini Peppers
- 18 cups Diced Jalapeno Peppers
- 1/4 cups Diced Tomatoes
- Cut wonton wrappers in half diagonally with a pizza knife.
- Heat oil in a heavy saucepan or deep fryer over medium heat.
- Once the oil is hot add wontons one at a time, working in batches of about 5 or 6 in the pan at a time and cook until just barely golden brown.
- Remove the fried wontons from the oil and drain on a paper towel lined dish.
- Repeat with the remaining wontons.
- Cut a small line gently down the length of the sausage links and peel casing away.
- Crumble sausage meat into a medium sauce pan and heat over medium heat, breaking it up with a spatula as you go.
- Cook until browned all the way through, approximately 8-10 minutes.
- Remove sausage from pan and drain on a paper napkin.
- Add the pepperoni to the same pan and heat over low heat until slightly crispy for 2-3 minutes.
- Remove from pan.
- Warm the alfredo sauce in the microwave for about a minute (microwave cooking times vary) stirring once.
- Assemble chips on a large platter followed by meats.
- Drizzle alfredo sauce on top and sprinkle cheeses and veggies over the top of that.
- Serve.
- Substitute chicken for Italian sausage or use both to make a combo.
- Enjoy!
