Autumn Chili (Light Recipe)
- 1 lb lean ground beef
- 3 teaspoons olive oil
- 15 ounces stewed tomatoes
- McCormick mild chili seasoning (I go with hot but go with your preference)
- 1 teaspoon ground cumin
- 1 cup chopped green bell pepper
- 12 cup red wine
- 14 cup hot sauce (of your choice)
- 1 cup chopped yellow onion
- 1 tablespoon minced garlic clove
- salt and pepper
- 1 tablespoon light sour cream
- 14 cup shredded cheddar cheese
- In a large saucepan, heat olive oil on medium high heat and brown ground beef.
- Add salt and pepper to taste.
- Add red wine, cumin and chili seasoning packet.
- Combine and saute for 2 minutes.
- Add garlic, green pepper and onion.
- Saute for 3 minutes.
- Add can of stewed tomatoes and hot sauce.
- Cover and simmer on low heat for 2 hours.
- Serve chili in small bowl or cup.
- Top with a dollop of sour cream and a sprinkle of cheese.
