Yellow Split Pea Soup (Vegan)

  1. Rinse the split peas.
  2. Salt the water or broth and bring it to a boil, and add the oil and garlic.
  3. Mix in the split peas and spices.
  4. Reduce the heat to medium-low, and let simmer loosely covered for 35-45 minutes or until there are no more hard pieces of peas left.
  5. Whip up the mixture in a blender.
  6. If you want a thinner mixture, use more water.
  7. I like it thick so I use exactly one quart, don't add any water, so it doubles as a soup and as a dip or sauce for naan and dosa.
