Mocha Walnut Christmas Cookies

  1. Preheat oven to 350u0b0.
  2. Melt over hot (not boiling) water, 1/2 cup chocolate chips.
  3. Stir until smooth; cool to room temperature. In a small cup, dissolve instant coffee in boiling water; set aside.
  4. In a small bowl, combine flour, baking soda and salt; set aside.
  5. In a large bowl combine butter, sugar, brown sugar and coffee; beat until creamy.
  6. Add egg and melted morsels; mix well. Gradually add flour mixture.
  7. Stir in remaining 1 1/2 cups of chocolate chips and walnuts.
  8. Drop by rounded measuring tablespoonfuls onto ungreased cookie sheets.
  9. Bake at 350u0b0 for 10 to 12 minutes.
  10. Allow to stand 2 to 3 minutes before removing from cookie sheets; cool completely.
  11. Makes about 24 three-inch cookies.
