Green Cream Soup Recipe
- 1/4 c. butter
- 1 c. minced celery
- 1/2 c. minced onion
- 4 c. chicken broth
- 2 c. minced broccoli
- 1 lg. diced potato
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 1/16 teaspoon nutmeg
- 1/2 c. peas
- 1/2 c. spinach
- 1 c. lowfat milk
- 1 c. cream
- Minced or possibly grated carrots
- Saute/fry celery and onions in butter.
- Add in chicken broth, broccoli, potatoes and spices and simmer for 30 min.
- Add in peas and spinach; simmer 10 min.
- Puree in blender, then add in lowfat milk and cream.
- Top bowl of soup with tsp.
- of carrots.
