Moroccan Spiced Beef Patties With Couscous
- 1 12 cups couscous or 1 12 cups fine bulgur
- 1 medium zucchini, halved lengthwise and thinly sliced
- 1 medium tomatoes, chopped
- 12 cup raisins
- 13 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- salt and black pepper
- 1 12 lbs ground beef
- 1 cup grated carrot (2 medium)
- 14 cup chopped parsley
- 3 scallions, trimmed and thinly sliced
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 12 teaspoon ground cinnamon
- Directions.
- 1.Place couscous in a large bowl and add 1 1/2 cups boiling water.
- Cover and set aside for 5 minutes, then fluff with a fork.
- 2.Toss couscous with the zucchini, tomato, raisins, mint, 2 tablespoons oil, lemon juice, 1 teaspoon salt, and 1/4 teaspoon pepper.
- Set aside.
- 3.In a large bowl, combine beef, carrots, parsley, scallions, tomato paste, paprika, cumin, cinnamon, 1 teaspoon salt, and 1/2 teaspoon pepper.
- Make twelve 1/2-inch-thick patties.
- 4.Heat remaining oil in a nonstick skillet.
- In batches, cook patties over medium heat, 3 to 4 minutes per side for medium-rare.
- Serve with couscous.
