Green Tomato Crisp Pickles Recipe
- 7 pound green tomatoes
- 1 gal. water
- 4 c. lime (pickling)
- 4 pound sugar
- 1 gal. vinegar
- 1/4 c. pickling spices
- 1 stick cinnamon (2")
- 1 tbsp. salt
- Mix lime and water well, letting any lime which does not dissolve settle to the bottom.
- Select, wash, dry and slice tomatoes.
- Pour off lime water and add in sliced tomatoes to it.
- Soak 24 hrs.
- Wash each piece well under running water and dry.
- Mix sugar and vinegar; pour over the tomatoes.
- Soak 12 hrs.
- Add in spices and bring to a boil.
- Cook at which point for 30 min.
- Place in glass jars.
- Will keep unsealed.
