Cranberry, Chocolate Chip and Walnut Cookies
- 1 1/2 cup oats, quick cooking
- 3/4 cups flour, all-purpose
- 3/4 cups whole wheat flour
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup walnuts chopped
- 1/2 cup chocolate chips (semi-sweet)
- 1 cup cranberries, dried
- 1 each eggs slightly beaten
- 2 teaspoons vanilla extract
- 1/2 cup honey
- 1/2 cup vegetable oil
- 13 cup milk
- Preheat oven to 375F (190C).
- Combine oats, flours, brown sugar, baking powder, baking soda and salt in medium bowl.
- Stir in raisins and apples.
- In a large bowl, combine egg, vanilla extract, honey, oil and milk.
- Stir in walnuts, chocolate chips and dried cranberries.
- Mix to form a smooth batter.
- Drop batter by rounded teaspoon onto cookie sheets lined with parchment paper or coated with cooking spray, leaving 2 inches between each cookie.
- Dip fingers in water and press dough down to about 1 1/2 inch diameter.
- Bake for about 15 minutes, or until lightly golden.
- Let cookies cool on the baking sheet for a few minutes.
- Transfer cookies to wire rack to cool completely.
