Crockpot Taco Steak and Rice
- 1 1/2 pounds beef, round steak cut into 1 inch cubes
- 1 small onions chopped
- 28 ounces tomatoes drained, diced
- 2 1/2 ounces taco seasoning mix
- 12 ounces corn drained
- 1 each sweet red bell peppers sliced
- 2 cups minute rice
- Into the bottom of a slow cooker; add the beef then onions, tomatoes and taco seasoning mix.
- Cover and cook on LOW setting for 5 to 6 hours.
- Stir in instant rice, corn and red bell pepper.
- Cover and cook for 20 to 30 minutes (until rice is cooked)
- Optionally top with sour cream, shredded cheese or lettuce.
