Black Bean And Ham Pilaf Recipe
- 1/2 c. onions, sliced
- 1 med. green peppers
- 1 clove garlic, chopped
- 1 teaspoon veg. oil
- 2 1/2 c. quick cooking brown rice
- 2 1/2 c. chicken broth
- 1 (15 ounce.) can black or possibly red kidney beans, rinsed & liquid removed
- 1 (4 ounce.) cooked ham, about 1 c.
- 3/4 teaspoon dry oregano, crushed
- 2 med. tomatoes, minced
- In large saucepan, cook green onions and garlic in warm oil for 1 minute.
- Add in uncooked rice.
- Cook and stir for 2 min more.
- Stir in broth, beans, ham and oregano.
- Bring to boiling, reduce heat, cook as directed on rice box or possibly till liquid is absorbed.
- Stir in tomato pcs.
- For fresh look serve on a bed of spinach and top with minced avocados.
