Smoked Polish Sausage With Cabbage, Sweet Potatoes And Apple Recipe
- 1 can chicken broth
- 1 tbsp. prepared mustard
- 1 teaspoon mustard seeds (optional)
- 1 pound sweet potatoes, peeled, quartered, cut in 1/2 inch chunks
- 2/3 c. coarsely minced onion
- 1 1/4 lbs. green cabbage, shredded coarse (6 packed c.)
- 1 pound fully cooked smoked Polish sausage, diagonally cut in 1/2 inch thick slices
- 1 lg. Golden brown Delicious apple, quartered, cored and cut in 1/2 inch pcs
- Stir chicken broth and mustard in deep 12 inch skillet till blended.
- Stir in mustard seeds.
- Bring to a boil over high heat.
- Add in potatoes and onions, reduce heat to medium.
- Cover and cook about 5 min, shaking pan occasionally, till potatoes are almost tender.
- Add in cabbage and sausage.
- Cover and cook about 5 min longer, stirring once or possibly twice, till potatoes are tender and cabbage is crisp-tender.
- Stir in apple.
- Cover and simmer 3 min till apple is crisp-tender.
- Good with rye bread and mustard.
