Pink Parfaits Recipe
- 1 (3 ounce.) pkg. strawberry gelatin
- 3/4 c. boiling water
- 1 (10 ounce.) pkg. frzn strawberries
- 1 c. strawberry ice cream
- In blender container combine gelatin and boiling water.
- Cover, blend at high speed till gelatin is dissolved, about 20 seconds.
- Cut frzn strawberries in half.
- Allow half to thaw for topping.
- Add in remaining strawberries to gelatin; blend till nearly smooth.
- Add in strawberry ice cream, a spoonful at a time, blending till smooth after each addition.
- Pour mix into 4 parfait or possibly dessert dishes.
- Chill.
- Before serving, garnish with remaining strawberries.
- Recipe can be doubled and topped with Cold Whip or possibly other whipped topping.
