Quick Chow Mein
- 1 onion, peeled and chopped
- 1/4 head cabbage, finely sliced
- 2 stalks celery, finely sliced
- 1 tbsp. oil
- 1-1/8 lb. minced beef
- chicken
- 1/4 cup short grain rice
- 2 tsp. prepared curry powder
- 1 pkg. chicken noodle soup mix
- 1 can (8 oz.) pineapple chunks, juice included
- 2 cups water
- 1/4 cup ready cooked shredded chicken (optional)
- 1 cup chopped green beans
- Heat oil in a skillet.
- Add onion and cabbage.
- Add meat and cook until browned, breaking the meat up as it cooks.
- Add rice, curry powder, soup mix, celery, pineapple chunks (with juice) and water.
- Add cabbage, beans and chicken, cook for another 5 minutes.
- Serve over fluffy rice.
