Veggie Hash
- 1 kg potato, diced
- 3 tablespoons cooking oil
- 1 medium onion, diced
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 3 medium carrots, diced
- 1 large red pepper, diced
- 2 stalks celery, diced
- 1 ear of corn, kernels removed
- 1 lb tofu, silken firm
- Heat the oil in a wok.
- Add the onion and cook until translucent.
- Add the potato and fry until just beginning to brown.
- Add in the remaining veggies.
- Stir fry until cooked but firm.
- Crumble the tofu over all and then cook until heated through.
- Serve immediately!
