Oh Boy! Broccoli Casserole
- Cooking spray
- 3 cups cooked long-grain white rice (see page 195)
- 2 (10-ounce) packages frozen chopped broccoli, thawed and drained
- 1 (10 3/4-ounce) can cream of mushroom soup, or 1 1/2 cups homemade Cream of Mushroom Soup (page 203)
- 8 ounces Velveeta, diced, or Cheddar or Monterey jack, shredded (2 cups)
- 1/2 cup chopped onion
- 1/4 cup whole milk
- 2 tablespoons unsalted butter, softened
- Preheat the oven to 350F.
- Coat a 2-quart casserole dish with cooking spray.
- Combine 3 cups of the cooked rice, the broccoli, soup, cheese, onion, milk, and butter in a large bowl.
- Spoon the mixture into the prepared casserole dish.
- Bake for 45 minutes, or until the cheese has melted and the casserole is heated through.
