Not German Apple Cake
- 3 cups green apples, chopped
- 1 12 cups oil
- 1 cup white sugar
- 12 cup brown sugar (packed)
- 3 eggs
- 3 cups all-purpose flour (okay to substitute whole wheat or spelt)
- 2 12 teaspoons cinnamon
- 12 teaspoon nutmeg
- 12-1 teaspoon ginger (optional)
- 1 teaspoon baking soda
- 12 teaspoon salt
- 1 cup walnuts or 1 cup pecans, chopped
- 2 teaspoons vanilla extract
- 3 tablespoons butter or 3 tablespoons margarine or 3 tablespoons coconut oil
- 3 tablespoons white sugar
- 3 tablespoons brown sugar, packed
- 3 tablespoons milk or 3 tablespoons non-dairy milk substitute
- 12 teaspoon vanilla extract
- Place chopped apples in lightly salted water while preparing the batter.
- Beat together oil and white and brown sugars.
- Add eggs, one at a time, until well blended.
- Sift together dry ingredients.
- Add to egg-sugar mixture, mixing well.
- Stir in well drained apples, nuts, and vanilla.
- Spread evenly into lightly oiled and floured bundt or tube type pan.
- Bake at 325 for 1 1/2 hours or until done.
- Cool in pan 20 minutes.
- Turn out onto a wire rack to cool completely.
- To make glaze, mix all glaze ingredients in a small sauce pot and bring to a boil.
- Boil 1 minute.
- Cool slightly, spread over cake.
