Pan Fried Potatoes With Lemon
- 2 tablespoons olive oil
- 1 12 lbs boiling potatoes, cut in 1/2 inch cubes
- 6 scallions, chopped (white and green separately)
- 1 teaspoon lemon zest
- Heat oil in skillet, then saute potatoes and white parts of the scallions, stirring frequently until potatoes are brown and tender; 15-20 minutes.
- Stir in scallion greens and zest and saute, stirring for 2 minutes.
- Season with salt and pepper.
