Brie, Bacon, and Basil Panini
- 6 strips Bacon
- 1 wheel Brie (You Will Obviously Not Use The Whole Wheel!)
- 1 cup Basil Leaves
- 4 pieces Rustic Italian Bread
- 4 Tablespoons Smuckers Apricot Or Peach Preserves
- Prepare the bacon by cooking it in a skillet over medium heat until crispy.
- When done, remove it from the skillet to a paper towel lined plate.
- Slice enough brie to create a single layer of it for each sandwich (about 1/4 inch thick).
- Spread about 1 tablespoon of apricot or peach preserves on one side of each slice of bread (more or less to taste).
- Set two of the slices of bread on your work surface (preserves side up).
- Assemble the sandwiches by layering the bacon, the brie, then the basil on top of both slices (be sure not to put cheese within a half inch of the edges, or it will ooze all over when in the panini press).
- Top each with another slice of bread (preserves side in).
- Grill in your panini maker on medium heat for 3-5 minutes!
