Turkey & Mushroom Meatloaf Patties

  1. Heat a non-stick skillet over med-hi heat.
  2. Add 2 tablespoons olive oil, then chopped mushrooms & shallots & season with salt & pepper.
  3. Saute 5 or 6 minutes, until dark & tender.
  4. Remove from heat, transfer to a bowl.
  5. Place turkey in a mixing bowl.
  6. Make a well in the center of the meat.
  7. Add remaining ingredients & mushroom/shallot saute.
  8. Mix together.
  9. Form into oval patties, 1 inch thick.
  10. Heat 1 tablespoon olive oil over med-hi heat in pan, add patties & cook 6 minutes on each side.
