Turkey & Mushroom Meatloaf Patties
- 3 tablespoons olive oil
- 8 cremini mushrooms, chopped
- 8 shiitake mushrooms, chopped
- 1 shallot, chopped
- salt, to taste
- pepper, to taste
- 1 13 lbs ground turkey
- 3 -4 sprigs fresh sage, chopped (about 2 tablespoons)
- 1 tablespoon Worcestershire sauce
- 12 cup Italian seasoned breadcrumbs
- 1 egg, beaten
- Heat a non-stick skillet over med-hi heat.
- Add 2 tablespoons olive oil, then chopped mushrooms & shallots & season with salt & pepper.
- Saute 5 or 6 minutes, until dark & tender.
- Remove from heat, transfer to a bowl.
- Place turkey in a mixing bowl.
- Make a well in the center of the meat.
- Add remaining ingredients & mushroom/shallot saute.
- Mix together.
- Form into oval patties, 1 inch thick.
- Heat 1 tablespoon olive oil over med-hi heat in pan, add patties & cook 6 minutes on each side.
