Watermelon & Tomato Salad
- 3 cup mini-Heirloom tomatoes, halved
- 5 cup watermelon cubes
- 1 small red onion or shallots, thinly sliced
- 1 cup extra virgin olive oil
- 2 tbsp Trader Joes pomegranate vinegar
- 2 tbsp soy sauce (if desired) or Hi racha for a kick
- 1/3 cup Goat cheese crumbles
- 1 Crackled pepper
- Combine watermelon and tomatoes in a large bowl; sprinkle with sugar and salt, tossing to coat.
- Let stand 15 minutes.
- Fold in onion and dressing mixture.
- Cover and chill 2 hours.
- Sprinkle with goat cheese and cracked black pepper to taste.
