MOMI BLACK SALTED BEAN CHICKEN
- 500 grams CHICKEN - CUT TO SMALLER PIECES
- 1/4 cup COOKING OIL
- 2 tbsp GRATED GARLIC
- 2 tbsp GRATED GINGER
- 5 tbsp BLENDED RED / YELLOW ONION
- 1 cup SLICED BIG RED / YELLOW ONION
- 1/2 tsp GROUND BLACKPEPPER
- 1/2 tsp CINNAMON POWDER - OPTIONAL
- 1/4 tsp NUTMEG POWDER - OPTIONAL
- 1 tsp BLACK SOY CARAMEL / KETCHUP
- 1 tbsp OYSTER SOUCE
- 1/2 tsp SALT
- 1/2 tsp SUGAR
- 1 tsp CHICKEN STOCK POWDER - TO ENHANCE THE CHICKEN TEST
- 2 cup WATER
- 1/2 cup SPRING ONION - CHOP TO 3-5 CM IN LENGTH
- 3 tbsp SALTED BEAN - CAN BE FOUND AT THE ASIAN MARKET
- Start with the chicken marinated with some salt, chicken stock and corn flour or any favourited marination then deep fried or it can be use just as they were
- Preheat cooking oil in a large pan.
- Start to simmer with the garlic, ginger and blended onion follows by the sliced onion for few minutes then toast in rest of the ingredients but leave the water, chicken and spring onion aside first
- Stir and let them simmer for few minutes then add in the chicken follows by the water.
- Let them boil at medium heat for about 5-10 minutes then add in the spring onion just before turning off the heat
- Serve while hot with some white rice for lunch or dinner
