Swampman Dan's Drunken Chicken

  1. Heat oil in a 5-quart kettle over medium heat.
  2. Add chicken pieces, a few at a time, and cook until browned on all sides.
  3. Discard excess fat.
  4. Return all chicken to kettle.
  5. Add garlic, soy, ginger, onion, beer, and coriander.
  6. Bring to a boil; cover.
  7. Bake in a 350 degree (175 C.) oven for one hour, or until thigh meat near bone is no longer pink when slashed.
  8. Remove chicken to platter and keep warm.
  9. Skim fat from pan drippings.
  10. Stir in cornstarch mixture and cook, stirring, until thickened.
  11. Season to taste with salt and pepper.
  12. Spoon some of the sauce over chicken and pass remaing sauce at the table.
  13. Serve with hot cooked rice.
