Skinny Greek Turkey Burger

  1. In a bowl, add the turkey, panko, garlic, oregano, basil, 1/2 teaspoon salt and egg.
  2. Using your hands, mix until combined.
  3. Split the mixture into four equal portions and form into patties.
  4. Youll need a skillet that has a lid.
  5. Place it over medium-high heat and spray with cooking spray.
  6. Allow it to get hot but not smoking.
  7. Cook the patties for about 3 minutes, or until browned.
  8. Turn over and cook for another three minutes.
  9. Add the chicken broth to the pan, cover the pan and allow patties to steam for about 10 minutes or until the internal temperature of the patties reaches 165 F. Remove from pan and allow to drain on a stack of 3-4 paper towels.
  10. In a bowl, add the artichoke hearts, roasted red peppers, feta and a pinch of salt and pepper.
  11. Lightly toast the English muffins.
  12. Spread the English Muffins with 1/2 tablespoon sour cream on each side.
  13. Place the turkey patties on the English muffins, add the artichoke/red pepper mixture.
