Perfect When the Weather's Hot! Spicy Chilled Miso Soup

  1. Heat the dashi stock in a pan.
  2. Dissolve the miso and doubanjiang.
  3. Transfer to a container and chill in the refrigerator.
  4. Sprinkle cucumber slices with a little salt and leave for 10 minutes.
  5. Squeeze out tightly.
  6. Combine with the tuna.
  7. Put rice in a bowl and pour the chilled soup over it.
  8. Add the cherry tomatoes plus the cucumber-tuna mix from Step 2, and sprinkle sesame seeds.
  9. Drizzle sesame oil to finish.
