No so Picky Picadillo
- 3 tablespoons vegetable oil
- 2 lbs extra lean ground beef
- 10 ounces carrots, sliced
- 1 onion, diced
- 4 tomatoes, diced
- 3 ounces chipotle peppers, canned diced
- Add the vegetable oil and ground beef to a large sauce pan and cook until the meat is brown and tender.
- Add carrots and cook another 5 minutes.
- Add the onion and any seasonings and cook until the onions are translucent.
- Add the tomatoes and chipotle peppers and cook for another 20 to 25 minutes.
- Serve over rice or mashed potatoes.
