Lamb Stew with Wine and Kale

  1. Roughly chop onion, garlic, carrot, bay leaf.
  2. Put in large pot with lamb shanks and cover with wine and water.
  3. Cook at a low simmer for 1 1/2 hours.
  4. Add chopped kale, potatoes and mushrooms and cook another half hour.
  5. Right before serving, throw in the chopped parsley.
