Lamb Stew with Wine and Kale
- 2 lamb shanks
- 6 cloves of garlic, smashed and skins removed
- 1 onion
- 1 carrot
- 2 md. yellow potatoes
- 1 bay leaf
- 2 cups mushrooms
- 1/2 bunch of kale
- 1/2 cup parsley
- 3 cups dry red wine
- 3 cups water
- salt & pepper to taste
- Roughly chop onion, garlic, carrot, bay leaf.
- Put in large pot with lamb shanks and cover with wine and water.
- Cook at a low simmer for 1 1/2 hours.
- Add chopped kale, potatoes and mushrooms and cook another half hour.
- Right before serving, throw in the chopped parsley.
