Easy Red Lentil Soup
- 2 tablespoons butter
- 1 onion
- 1 leek, finely chopped
- 1 celery, finely chopped (optional)
- 1 large carrot
- 1 cup red lentil
- 5 cups stock
- salt
- pepper
- Place butter, onions, celery and leek in pot cook on med/ high heat for 4 minutes.
- Add carrots, bay leaf and lentils.
- Pour in stock.
- Cover and cook for 15 minutes stirring half way through.
- Remove from heat, cover and let stand for 5 minutes.
- Remove bay leaf then use immersion blender to puree until smooth,.
