Easy Red Lentil Soup

  1. Place butter, onions, celery and leek in pot cook on med/ high heat for 4 minutes.
  2. Add carrots, bay leaf and lentils.
  3. Pour in stock.
  4. Cover and cook for 15 minutes stirring half way through.
  5. Remove from heat, cover and let stand for 5 minutes.
  6. Remove bay leaf then use immersion blender to puree until smooth,.
