Apple Smoked Pork Ribs
- 1 Rack of pork ribs
- 1 envelope Hot apple cider mix (with sugar)
- 1 tsp Lawry's season salt
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Powdered ginger
- 1 tsp Chinese 5 spice
- 1 cup Apple juice or cider
- 2 tbsp Apple cider vinegar
- Remove the membrane from the back of the pork ribs.
- Or have your butcher remove it when you purchase.
- Mix Apple rub ingredients and season ribs very well with all of the rub.
- Wrapped in plastic wrap and refrigerate for 24 hours.

- Set up your grill for Indirect Heat with a drip pan in the middle.
- Add water to the drip pan.
- Place the ribs on the grill over the drip pan and two handfuls of wet apple wood chips directly to the hot coals.
- Cook at 300F.
- Mix ingredients for mop sauce and put in a spray bottle.
- After 20 to 30 minutes spray the ribs down with the mop sauce.
- Continue cooking at 300F for 2 & 1/2 to 3 hours.
- Sprayed with mop sauce every 15 to 20 minutes.
- When the bones tip is exposed by about 2 inches the ribs are done.
- Let rest 15 to 20 minutes before carving and serving.
