Rotini Nicoise

  1. Cook pasta in boiling water according to package instructions or until firm to the bite.
  2. Rinse with cold water.
  3. Drain and place in a serving bowl.
  4. Blanch green beans in boilng water approximately 2 minutes.
  5. They should still be crisp.
  6. Drain, rinse with cold water and add to pasta.
  7. Add tomatoes, cucumbers, sweet peppers, onions, tuna, olives, dill and anchovies.
  8. Make the dressing: In a small bowl, combine oil, lemon juice, vinegar, water and garlic.
  9. Pour over pasta and toss.
  10. Garnish with cucumber shavings.
