Rotini Nicoise
- 12 oz. rotini
- 6 oz. green beans, cut into pieces
- 1-1/3 cup chopped tomatoes
- 3/4 cup diced cucumbers
- 3/4 cup diced red
- green peppers
- 1/2 cup sliced red onions
- 1 can (6-1/2 oz.) flaked tuna packed in water, drained
- 1/3 cup sliced olives
- 1/2 cup chopped fresh dill
- 1 tbsp. dried dill
- 5 anchovies, minced
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 1/4 cup balsamic vinegar
- 2 tbsp. water
- 2 tsp. crushed garlic
- Cucumber shavings, for garnish
- Cook pasta in boiling water according to package instructions or until firm to the bite.
- Rinse with cold water.
- Drain and place in a serving bowl.
- Blanch green beans in boilng water approximately 2 minutes.
- They should still be crisp.
- Drain, rinse with cold water and add to pasta.
- Add tomatoes, cucumbers, sweet peppers, onions, tuna, olives, dill and anchovies.
- Make the dressing: In a small bowl, combine oil, lemon juice, vinegar, water and garlic.
- Pour over pasta and toss.
- Garnish with cucumber shavings.
