Grandma's Crisp Cut Pineapple Pie
- 1 recipe for pie crust (double crust)
- 2 12 cups crushed pineapple, undrained (#2 can)
- 2 tablespoons cornstarch
- 12 cup sugar
- 14 teaspoon salt
- 1 tablespoon butter
- 1 tablespoon lemon juice
- Line an 8" pie pan with pastry (I use my Aunt Nancy's Flaky Pastry Pie Crust, found here in this site).
- In a saucepan, combine undrained pineapple with cornstarch, sugar and salt.
- Cook until thick and clear, stirring constantly.
- Remove from heat and stir butter and lemon juice.
- Pour into pastry lined pan.
- Roll out and cut remaining pie crust into strips and weave to make a lattice top pie.
- Bake at 425 for 25-30 minutes.
