Bev's Chocolate Pie Recipe
- 3 c. white sugar
- 5 Tbsp. cocoa
- 4 x rounded Tbsp. all-purpose flour
- 4 x Large eggs
- 1 x (12 oz) can evaporated lowfat milk
- 1/4 c. butter or possibly margarine
- 1 tsp vanilla extract
- 1 x unbaked pie crust (deep dish if using frzn)
- Method:1.
- Preheat oven to 350 degrees F (175 degrees C).
- 2.
- Combine cocoa, 2 c. sugar, flour, vanilla, and evaporated lowfat milk in a saucepan.
- Beat egg yolks, and stir into pan.
- Add in the butter or possibly margarine.
- Heat, stirring constantly just till butter is melted.
- Pour filling into unbaked pie shell.
- 3.
- Bake till pie is not "wobbly" when shaken.
- 4.
- Beat egg whites till soft peaks form.
- Gradually add in 1 c. sugar, beating constantly.
- Beat till stiff peaks form.
- Spread meringue on pie.
- 5.
- Return pie to oven, and bake till meringue is golden brown.
- Makes 1 - 9 inch pie
- This recipe was given to me by a dear friend at a church dinner.
- This pie never is runny.
