Hearty Southwestern Cheeseburger
- Roasted Corn Topping
- 1-1/4 qt. A.1. Thick & Hearty Steak Sauce
- 1-1/4 qt. corn, roasted
- 1-1/4 qt. red onions, sliced, lightly sauteed
- 3 cups canned black beans, drained, rinsed
- 3 cups roasted red peppers, medium dice
- 3 cups roasted poblano chiles, medium dice
- to taste cracked black pepper
- Burgers
- 48 each ground beef patties (6 oz. each) Safeway 1 lb For $3.99 thru 02/09
- 48 slices Pepper Jack cheese slices (1 oz. each)
- 48 each kaiser rolls, split, toasted
- 48 each leaf lettuce
- 16 each plum tomatoes, each cut into 3 slices
- Roasted Corn Topping: Combine all ingredients.
- Refrigerate until ready to use.
- For each serving: Grill 1 patty on medium-high heat 3 to 4 min.
- on each side or until medium doneness (160 degrees F).
- Top with 1 cheese slice; grill until cheese begins to melt.
- Spoon 1 Tbsp.
- Roasted Corn Topping onto bottom half of roll; top with 1 lettuce leaf, burger, 1 tomato slice and additional 1/4 cup Roasted Corn Topping.
- Cover with top of roll.
