Bean and Pasta Soup
- 2 tablespoons olive oil
- 2 zucchini, sliced
- 1 tablespoon garlic powder
- 2 cans chicken broth
- 1 13 cups water
- 1 tablespoon parsley flakes
- 1 can diced tomato
- 12 cup uncooked pasta shells
- 1 can kidney bean, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 2 celery ribs, sliced
- Heat oil in saucepan.
- Add zucchini and garlic powder.
- Cook until tender-crisp.
- Add broth, water, parsley flakes, tomatoes, and celery.
- Heat to a boil.
- Stir in pasta.
- Reduce heat to medium.
- Cook 10 min.
- ,stirring occasionally.
- Add beans and heat through.
