Cranberry Relish or Compote
- 8 ounces cranberries
- 4 ounces frozen raspberries
- 12 cup raisins
- 4 ounces figs, chopped into 1/2-inch pieces
- 2 -3 tablespoons raw sugar
- 14 cup apple cider
- 1 lemon, grated rind of
- 1 pinch salt
- 1 cup walnuts, finely chopped
- Combine all ingredients, except walnuts, in a medium saucepan.
- Bring to a boil, reduce heat to low and cook 15-20 minutes, stirring often.
- Adjust sugar to taste.
- Add more cider if the mixture gets too dry.
- Remove from heat and stir in walnuts.
- May be served warm or at room temperature.
