Shiitake Spinach Udon
- 4 cup water
- 3/4 cup dried bonito flakes
- 1/4 cup soy sauce
- 1 tbsp sugar
- 4 spinach
- 2 packages Japanese udon noodlew
- 6 shiitake mushrooms (soaked)
- Bring water to boil; reduce heat and add the dried bonito flakes.
- Simmer for 15 minutes, strain; save the stock and heat pot.
- Throw out flakes.
- Add soy sauce and sugar to the stock.
- Slice shiitake mushrooms.
- Add to the heated stock, along with the mushroom soaking liquid.
- Cook for three minutes.
- Add noodles ; cook for 2 minutes.
- Put in the spinach and cook for about 1 minute.
- Serve in two large bowls
