Pork Chops With Tomatillo White Beans
- 4 boneless pork chops
- 2 (15 ounce) cans great northern beans, drained
- 2 cups avocado tomatillo salsa
- 14 cup chopped onion
- 14 cup chopped fresh cilantro
- 1 teaspoon salt, to taste
- 1 teaspoon pepper, to taste
- 1 tablespoon olive oil
- 14 cup chicken stock or 14 cup chicken broth
- Marinate the chops ahead of time in the salsa if you like.
- After marinating, salt and pepper chops.
- In a small amount of oil over med high heat, pan fry the chops for 2 min each side.
- Add the chopped onions while frying.
- Remove chops.
- In the same pan, add the beans, a small amount of chicken stock, salsa to taste, cilantro, and pepper to taste.
- Stir completely and bring to a boil.
- Add the chops back inches Cover, reduce heat and simmer until done.
