HG's Cheesy Bac-Onion Burger
- 1 tablespoon fat-free mayonnaise
- 12 teaspoon spicy brown mustard
- 1 slice center-cut bacon or 1 slice turkey bacon
- 13 cup thinly sliced onion, cut into 2-inch strips
- 1 veggie burger, patty (Boca Original Vegan Meatless Burger)
- 1 slice 2% milk cheddar cheese
- one 100-calorie flat sandwich bun (like Arnold or Brownberry or Oroweat Sandwich Thins)
- In a small bowl, mix mayo with mustard until uniform.
- Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave.
- (See package for cook time.)
- Place onion in a skillet sprayed with nonstick spray.
- Add 1/4 cup water, cover, and set heat to medium.
- Cook for 6 minutes.
- Uncover, and cook and stir until water has evaporated and onion has softened and lightly browned, about 3 minutes.
- Transfer onion to a small bowl, and cover to keep warm.
- If needed, clean skillet.
- Remove from heat, re-spray, and return to medium heat.
- Cook burger patty for about 4 minutes per side, until cooked through.
- Top patty with cheese and cook until melted, about 45 seconds.
- Split bun into halves, and place the cheese-topped patty on the bottom half.
- Break bacon in half, and place over the patty.
- Top with cooked onion.
- Spread the top half of the bun with mayo mixture, and place it over the onion.
- Eat up!
