Cantaloupe With Chicken Salad Recipe
- 2 c. Cubed cooke chicken
- 1 1/2 c. To 2 C Fresh blueberries
- 1 c. Sliced celery
- 1 c. Seedless green grapes, halved
- 1/2 c. Sliced almonds
- 3 x Cantaloupes, halved seeded
- 1/2 c. Mayonnaise
- 1/4 c. Lowfat sour cream
- 1 Tbsp. Fresh lemon juice
- 1 1/2 tsp Grated lemon peel
- 1 1/2 tsp Sugar
- 1 1/2 tsp Sugar substitute
- 1/2 tsp Grnd ginger
- 1/4 tsp Salt (optional)
- In a large bowl, combine chicken, blueberries, celery, grapes and almonds.
- In a small bowl, mix dressing ingredients.
- Pour over the chicken mix and toss gently.
- Spoon into cantaloupe halves.
- Serves 6.
