Almost Whole Wheat Apple Oatmeal Cookies

  1. Preheat oven to 375F (190C).
  2. In a medium bowl, combine oats, flours, baking powder, baking soda, salt and cinnamon.
  3. Stir to combine.
  4. Stir in raisins if using, and apples.
  5. In a large bowl, combine egg, honey, oil and milk.
  6. Stir in dry ingredients.
  7. Mix to form a smooth batter.
  8. Drop batter onto ungreased baking sheets using a rounded teaspoon of dough for each cookie, leaving 2 inches of space between each.
  9. Dip fingers in water; press dough down to about 1 1/2 inch diameter.
  10. Bake for 10 to 12 minutes or until lightly golden.
  11. Transfer cookies to rack to cool.
  12. Note: You can add a thin slice of apple over cookies before baking for a fancier result.
