Roasted Potatoes Poupon
- 3 gal. Small red potatoes, quartered
- 1/2 cup garlic, chopped
- 1-1/2 cups GREY POUPON Classic Dijon Mustard or Country Dijon Mustard
- 3 cups butter, melted
- 1-1/2 cups fresh parsley, chopped
- Spray 4 full (2-inch) hotel pans (or one 2-inch third hotel pan for trial recipe) with cooking spray.
- Place potatoes and garlic in prepared pans; mix lightly.
- Cover tightly with foil.
- Bake in 350F-conventional oven for 45 minutes to 1 hour or until potatoes are just tender.
- Mix mustard, butter and parsley with wire whisk until well blended.
- Pour about 1 cup of the mustard mixture over potato mixture in each pan (or pour all of butter mixture over potato mixture for trial recipe); toss to coat.
- Bake, uncovered, an additional 15 minutes or until potatoes are tender.
