Grilled Eggplant with Tomato & Mozzarella

  1. Heat barbecue to medium-high heat.
  2. Toss eggplant with dressing.
  3. Grill 10 min., turning after 5 min.
  4. Place in single layer in 13x9-inch disposable foil pan sprayed with cooking spray; top with tomatoes and cheese.
  5. Cover with foil; grill 4 to 5 min.
  6. or until cheese is melted.
  7. Top with basil.
