Grilled Eggplant with Tomato & Mozzarella
- 1 eggplant (380 g), ends trimmed, cut crosswise into 1/4-inch-thick slices Safeway 1 ea For $1.28 thru 02/09
- 1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
- 3 plum tomatoes, cut into 1/4-inch-thick slices
- 1-1/2 cups Cracker Barrel Shredded Part Skim Mozzarella Cheese
- 1/4 cup thinly sliced fresh basil
- Heat barbecue to medium-high heat.
- Toss eggplant with dressing.
- Grill 10 min., turning after 5 min.
- Place in single layer in 13x9-inch disposable foil pan sprayed with cooking spray; top with tomatoes and cheese.
- Cover with foil; grill 4 to 5 min.
- or until cheese is melted.
- Top with basil.
