Southwestern Meatloaf

  1. Preheat oven to 350F.
  2. Place onion, cilantro, tapioca, eggs and taco seasoning mix in food processor container fitted with steel blade; cover.
  3. Process using on/off action until finely chopped.
  4. Add beans; cover.
  5. Process, using on/off action, until beans are finely chopped.
  6. Place in medium bowl.
  7. Add meat and 1/2 cup of the salsa; mix just until blended.
  8. Shape into oval loaf in shallow baking pan.
  9. Bake 1 hour 15 minutes or until cooked through.
  10. Top with remaining 1/2 cup salsa.
