Three Cheese and Onion Tart
- 1 (220g) frozen shortcrust pastry case
- 2 tablespoons butter
- 2 onions, sliced
- 2 teaspoons brown sugar
- 125g block PHILADELPHIA Cream Cheese, softened
- 2 eggs, lightly beaten
- 1/4 cup cream
- salt and pepper, to taste
- 50g blue cheese or feta, crumbled
- 1/4 cup shredded Parmesan cheese
- Prick pastry case all over with a fork.
- Bake in a hot oven 200C for 5-8 minutes or until just golden.
- Melt the butter and saute the onions and sugar over a low heat for 8-10 minutes or until golden.
- Cool.
- Combine the Philly*, eggs and milk and beat until smooth, season to taste.
- Spoon the onions into the pastry case, pour over the custard and sprinkle with the cheeses.
- Bake in a moderate oven 180C for 20-30 minutes or until the filling is set and golden.
- Slice and serve warm or cold.
