Three Cheese and Onion Tart

  1. Prick pastry case all over with a fork.
  2. Bake in a hot oven 200C for 5-8 minutes or until just golden.
  3. Melt the butter and saute the onions and sugar over a low heat for 8-10 minutes or until golden.
  4. Cool.
  5. Combine the Philly*, eggs and milk and beat until smooth, season to taste.
  6. Spoon the onions into the pastry case, pour over the custard and sprinkle with the cheeses.
  7. Bake in a moderate oven 180C for 20-30 minutes or until the filling is set and golden.
  8. Slice and serve warm or cold.
